Christina Nicole January 5 at 1:18pm Full of protein, quick and easy and you can put the left overs in mason jars for lunch the next day! <3 CREAMY TANGY TOMATO SOUP <3 Ingredients: 2 28 ounce cans diced tomatoes 1 1/2 cup Greek yogurt 2 tbsp Parmesan cheese 1/2 tsp oregano 1/2 tsp basil 1/2 tsp garlic powder Directions: Puree the can of tomatoes in a blender or food processor. Add Greek yogurt, spices and parmesan and blend briefly to mix. Transfer to microwave safe dish or pot. Heat in microwave to taste or bring to desired temperature on the stove but do not allow to boil. Garnish with chopped parsley and a sprinkle of parmesan if desired.
