Place sliced tomatoes onto a cookie sheet that has been sprayed with cooking spray. Drizzle the tomatoes with olive oil and sprinkle with salt and pepper. Place in oven and roast for 8-10 minutes. Remove from oven and top with basil pesto and parmesan cheese. Return to oven until cheese is melted. Enjoy! Basil Pesto 2 cups fresh basil leaves 2-3 cloves garlic, minced 3 Tbsp. pine nuts (or walnuts) 1/4 tsp. sea salt 3/4 cup extra-virgin olive oil 1/4 cup freshly grated parmesan cheese Directions: Place all ingredients into a food processor or mini chopper and pulse until mixed thoroughly and makes a grainy spread. Basil pesto is delicious mixed with cooked pasta, used on a pizza in the place of marinara sauce or on top of crusty bread.
